Recipe costing software

Recipe costing turns a bill of materials into a plate cost. AKLI stores the recipe, the yield, and the weighted average cost so the cost card moves when a new delivery arrives, across every branch that sells the dish.

Why a static cost card goes stale

A menu engineering sheet filled in once a quarter is already wrong the week a protein price moves. If the same dish is prepped in a central kitchen and sold in five outlets, a single cell in a workbook cannot hold five supplier prices and one shared method.

A useful cost card has: ingredient quantity, unit, yield or trim loss, and weighted average cost. Sub-recipes (a sauce, a dough, a marinade) should roll into the parent dish so you do not cost the same base five different ways. The step-by-step method is how to cost a recipe, and the blank file is the free recipe costing template (XLSX). Groups that share the method are covered in recipe costing for restaurant groups.

How AKLI costs a dish

You build the recipe once. Sub-recipes nest. AKLI costs recipes at weighted average cost: a new delivery at a new price moves the average, and every recipe that uses the ingredient recalculates. Supplier price changes are that movement. Branches can share the method and still carry their own average, which matters when the same SKU is bought locally.

Recipe cost is the theoretical side of food cost. Pair it with inventory counts to see actual cost. The comparison is the point of food cost control.

  • ✓Ingredient quantities with yield
  • ✓Sub-recipes that roll into the selling item
  • ✓Price history from purchase orders and invoices
  • ✓Shared recipes, local prices, across branches
  • ✓A cost the team can ask the AKLI assistant about

What this is not

Recipe costing inside a POS is often a single number typed onto the item. It does not rebuild itself from invoices, and it does not know what is in the walk-in. AKLI does not replace your POS. It costs the recipe and, if you import sales, compares that cost with what you sold. See AKLI versus POS-only costing.

Does a supplier price change update every dish?

Yes. AKLI costs recipes at weighted average cost. A new delivery at a new price moves the average, and every recipe that uses the ingredient recalculates, including sub-recipes. A cost card that is typed once a quarter is already wrong the week the protein moves.

Can branches share a recipe and keep different prices?

Yes. The method can be shared. AKLI costs recipes at weighted average cost on the branch that bought the item, which matters when the same SKU is purchased locally.
