One percentage hides the brand that drifted
A group that posts a single food-cost percentage across two concepts cannot tell whether the grill brand over-portioned or the bakery brand threw out dough. The outlets may even share a walk-in. The guest promise, the recipe, and the sales mix are still different, and the percentage you can act on is the one for the branch that sold the food. Outlets that share a method across a network are multi-branch and franchise groups.
AKLI does not ask you to buy a second product per brand. Each outlet is a branch with its own stock, counts, and sales. Recipes can be shared across outlets of the same concept, or kept apart when the dish is not the same plate. Ingredient prices stay on the branch that bought them, which matters when two brands use one SKU from different suppliers.
Shared production, separate menus
When a commissary feeds several brands, cost the batch once and transfer the yielded item into each outlet at cost. Each brand’s recipe then depletes that item in the quantity that plate uses. Do not rebuild the sauce from raw ingredients inside every brand or the butter is costed again. The production side is central production.
Menu prices differ by brand even when the recipe is shared. Contribution margin (menu price minus recipe cost) is how you see that. Food cost percentage alone will flatter the brand with the higher price. The method is in menu engineering and food cost.
