Digital Temperature Logging Practices

A temperature log is evidence that a check in your HACCP plan happened. It is not the plan. Digital logging changes who can see a missing check and whether the time on the row is the time of the reading. It does not choose the limit for you, and it does not make a kitchen compliant.

What each row should hold

  • –

The check: which fridge, which delivery, which cook step, which hot-hold. Name the point the plan already lists.

  • –

The result, in the unit the plan uses.

  • –

The limit for that point, taken from your plan. This page does not publish a legal temperature. Authorities and auditors differ, and a number copied from another kitchen is how logs get filled with the wrong threshold.

  • –

Date and time captured when the reading is taken.

  • –

    The person who recorded it.

  • –

The branch. A group with one shared sheet cannot tell which kitchen was silent.

  • –

A corrective action when the result is outside the limit: what happened to the food, and what happened to the equipment.

Checks operators usually schedule

The plan decides the list. The checks that show up in almost every kitchen program are receiving (the truck, before the food is put away), cold storage, cooking, cooling, and hot holding or display. A useful log is one row per check the plan names, at the frequency the plan names. Adding extra rows nobody is trained to complete produces a tidy fiction.

Receiving is also a purchasing event. Food you reject for temperature should not enter stock, and it should not sit only on a clipboard while the invoice is booked in full. That link is purchasing variance and goods received. Food you throw away after a failed check belongs on a waste log at cost, or it reappears later as unexplained food-cost variance. See how to track kitchen waste.

Why paper fails a second branch first

One site can walk an inspector to a folder. A group cannot. The usual failures are a week filled in on Thursday, a signature that does not identify a person, a corrective-action box left blank because the form made it optional, and no way for a regional lead to see that one branch stopped logging lunch. Photos of forms are not a search. The side-by-side with software is AKLI versus paper HACCP logs.

Qatar, the UAE, and Saudi Arabia

AKLI’s HACCP module is built to meet the digital logging requirements of Qatar’s Ministry of Public Health (MOPH), the UAE Food Safety Department, and the Saudi Food and Drug Authority (SFDA). Logs are timestamped and can be exported. That is a statement about the shape of the record. It is not a certificate from any of those bodies, and turning the module on does not make a site compliant. The kitchen still runs the checks, trains people, and keeps the plan. The product page is digital HACCP for restaurant groups.

Groups that operate in more than one of those markets can still run one kitchen program and hand over the export the inspector asks for. The product interface is available in English, French, and Arabic, so the person at the fridge can log in the language they work in. This marketing site is available in English, French, and Arabic.

What to do when a reading is out of range

Write the action in the same row as the reading. “Rechecked” is not an action unless you also say what you did with the food. If the food was discarded, the waste log should see the quantity. If the equipment was serviced, the next readings are how you know the action held. Silent correction (fix the fridge, then overwrite the morning number) is the failure mode an edit history is there to show. AKLI keeps that trail. Paper does not.

Questions operators ask

Does a temperature log make a kitchen compliant?

No. A temperature log is evidence that a check in your HACCP plan happened. It is not the plan. Digital logging does not choose the limit for you, and it does not make a kitchen compliant.

What should each temperature row hold?

The check the plan already lists, the result in the unit the plan uses, the limit taken from your plan, the date and time captured when the reading is taken, the person who recorded it, the branch, and a corrective action when the result is outside the limit.

Does this page publish a legal temperature?

No. This page does not publish a legal temperature. Authorities and auditors differ, and a number copied from another kitchen is how logs get filled with the wrong threshold.
