Production site and selling site are different stock ledgers
The commissary buys and preps. The outlet receives, holds, and sells. If both activities land in one inventory number, food cost at the outlet is fiction and food cost at the commissary is fiction in the other direction.
AKLI treats each site as a branch. A transfer out of central production is a transfer in at the outlet. Recipe cost can be calculated where the batch is made, then carried as an item the outlet depletes when it sells.
What operators run on AKLI
Shared recipes, local or central purchasing, stock at each unit, and food cost per branch. The plate method is the recipe costing guide. Outlets that belong to a wider network sit under multi-branch groups. Waste logged at prep is valued in money, which is how you see whether the batch or the outlet is the leak. Read how to track kitchen waste for the categories that matter.
Sales still do not require a particular POS. Outlets can import a sales file or a CSV. AKLI is the back-of-house system, not a till.
